Snack - Orange chocolate muffins

Orange-chocolate muffins with tangerine [nothing garanteed free from]

  1. Preheat the oven to 200ºC.
  2. Combine lemonjuice and almond drink and leave to react for 10 minutes.
  3. Mix the egg with the olive oil, orange zest and juice, almonddrink, ginger and chocolate. Add in the flour and bakingsoda, optionally add some chopped nuts. 
  4. Divide the batter between 6 tins and bake for 20-25 minutes. Decorate with a slice of tangerine.

Lemon 1, sqeezed
Unsweetened almond drink 250 ml
egg 1, whisked
olive oil 75 ml
orange  zest of 1 orange and juice of ½ 
ginger small piece, peeled and grated
dark chocolate 60 g, chopped
wholegmeal flour 240 g
baking soda 1 tsp
tangerine 1, peeled and parted

optionally: unsalted nuts of choice, coarsely chopped

utensils: muffintray with 6 tins, lined with paper or silicon molds.
